Scientist II – Bakery R&D and Extrusion

• Job Details:Commissioned twin-screw extrusion line with gas injection for bakery/snack prototyping. Developed clean-label bakery products tailored to India, AMEA, NAR markets. Supported ingredient sourcing and cross-functional project delivery.

• Job Details:Designed shelf stable cake-premixes, and low calorie (< 50) yogurt for Ratio brand (NAR launch). Filed 8 invention records (extrusion, yogurt, clean-label platforms). Developed and validated cavitation techniques for textural enhancement and enzyme-assisted crosslinking in dairy, bakery, and cereal platforms.

Lab Head – Food Processing & Bakery

• Job Details:Set up bakery lines, thermal profilers, and NABL aligned testing labs. Mentored student researchers and rural start-ups in shelf-life, formulation, and bakery innovation. Supported NAAC, ABET accreditations and executing CSIR/DBT-funded projects.
