- Job Details:Cost Control: • Finalize and audit cost of sales budget for all chains. • Review all chains recipes cost and actual cost. • Review monthly closing for all Chains. • Review all Finalize and audit cost of sales budget for all chains. • Review the recipes for any new product in all the chains. • Review and follow up on all the items cost of the commissary center. • Reports any change in the prices and its effect on the chain's cost. • Review final monthly report for all restaurants and analyze cost variance and deviation. • Review pace setter report for all the chains and proceed with monthly meeting with operations. • Review the variable cost in the P&L report by the end of the month for all the chains. • Analyze all the data of the deviated restaurants and take the necessary actions. • Attend investigation with the legal department and knowing the reasons of the deviation if it’s found. • Attend the monthly operation meeting for all chains. • Review and follow up the sales for all the chains and confirm with the revenue department. • Take actions on short and over in all spot checks adhering to company’s policy and to ensure it is applied in all criteria’s (cash, food etc.). • Review the product mix for all the chains to confirm that all the items have a cost and also to ensure that all the items have the right recipe. • Test and finalizing recipes for each chain after testimony and experiments. • Review the monthly comparison to each chain with the same period from the previous year requested by the head office. • Audit monthly manual entries to the caravans and the party halls. • Review all monthly reports for Head Office. • Marketing campaigns pre-study review. • Analyze and evaluate post-studies for marketing campaign. • Review and analyze prices –sales/cost- changes effect and impact. Accounts Payable/Receivables: • Reconciles processed work by verifying entries and comparing system reports to balances. • Charges expenses to accounts and cost centers by analyzing invoice/expense reports; recording entries. • Pays vendors by monitoring discount opportunities; verifying federal id numbers; scheduling and preparing checks; resolving purchase order, contract, invoice, or payment discrepancies and documentation; insuring credit is received for outstanding memos; issuing stop-payments or purchase order amendments. • Maintains accounting ledgers by verifying and posting account transactions. • Verifies vendor accounts by reconciling monthly statements and related transactions. • Maintains historical records by microfilming and filing documents. Petty cash: • Review restaurants and departments petty cash reimbursement. • Review documentations for issuing permanent and temporary petty cash. • Review any cash transactions if any. • Ensure the register of any cash receipt/payments. • Ensure all expenses are booked within the related period. Restaurants Inventory: • Responsible For Counting The Inventory in each restaurant Comparing it with the actual usage and waste and employee meals and get the variance and check the reason for each variance . Sales: • Review and posting journal entries • Perform month closing process • Review and follow up on requested sales reports
