Job Description

  • Estimate the annual needs of food material and tools and submit them to the food and beverage manager during the preparation of budget for approval.
  • Set a plan for manpower needs in coordination with the food and beverage manager.
  • Recommend alternatives to raw materials of the same quality to reduce the cost.
  • Prepare and follow up the employee’s distribution plan periodically
  • -Set the optimum vision for ease of operation in the kitchen in coordination with the relevant departments (for clubs included in the renovation plan).
  • Apply serving and presentation techniques and quality standards as defined by the operating standards (SOP).
  • Select and develop recipes and production standards to ensure the required quality.
  • Ensure that each department requests the needed materials and items for the next day according to available stock.
  • Supervise daily and follow-up the inventory validity dates and making sure to follow the (FIFO) policy.
  • Ensure the readiness and efficiency of all kitchen appliances and communicate with the maintenance department to perform periodic maintenance of the tools or in case of any damage.
  • Make sure of the division of work, how to prepare foods, and all tasks are done regularly and that the kitchen staff is fully aware of them using a checklist.
  • Train and guide the kitchen staff, coordinating and supervising all activities related to cooking
  • Set a regular meeting with the section heads of departments to help in raising the level of service provided.
  • Follow-up of the team’s performance after the monthly training.
  • Conduct reviews on food hygiene and safety and ensure compliance with Hazard Analysis Critical Control Point (HACCP)
  • Follow-up the food consumption, prepare reports, and submit them to the Food and Beverage Manager.
  • Ensure that all staff complies with the instructions for the optimal consumption of raw materials in the kitchen and Steward sections.
  • Prepare reports on the monthly consumption rate of raw materials to the food and beverage manager.
  • Monitor employee’s performance and provide on the job training.
  • Follow-up the implementation of safety procedures, instructions, and guide employees towards following safe working methods and provide them with appropriate training.
  • Perform any additional tasks that might be necessary for easier workflow, within the mainframe of the job’s specialty.

Job Requirements

Educational background and previous experience:

  • Suitable Bachelor’s degree preferable in Tourism and Hotels.
  • Experience of not less than 10 years in the same field or at least 5 years in a similar job.

Knowledge and Functional Skills:

  • Knowledge of the kitchen system and management.
  • Familiar with all food processing policies and procedures.
  • Set the plan for the expected needs of the raw materials.
  • The skill of developing menus.
  • Good knowledge about (HACCP) rules and regulations and food safety.
  • Familiar with the MS Office.
