Job Description
- Prepare and analyze food and beverage costs on a weekly basis and recommend alternatives to improve costs.
- Establish and maintain a database for food and beverage inventory stock including up-to-date pricing.
- Ensure proper storage and issuance of all food and beverage items
- Assists Director of Purchasing
- Quarterly calculated Cost potentials, to include all outlets
- Key entrée perpetual (ie pizza control charts) – tied to menu costs
- Month end food credits recorded properly
- Daily exception reports run and reviewed
- Bottle requisitioning process in place
- Bar Pars are maintained in every outlet/ Wine bin tags utilized
- Oversee Inventories working with purchasing to ensure they are timely and accurate
- Takes a proactive approach to activity concerned by Cost Control, anticipating potential opportunities in all departments
- Develops service enhancements and monitors change in a financial environment
- Delivers to tight deadlines
- Assists in month end close to include the calculation of monthly F&B allocation expenses
- • Prepare variance analysis for food & beverage and communicating with relevant parties.
- • Check and verify voids in the POS systems

Job Requirements
- Bachelor’s degree in finance or relevant field strongly preferred
- Minimum 4 years’ experience working in cost control
- Able to generate budgets and reports. Experience in Financial Statements, Inventory Controls, and Inventory Cost Controls for Food and Beverage Required.
