Job Description

  • To uphold culinary standards in the daily operations
  • Where applicable, assist the Sous Chef with stock rotation and inventory checks.
  • To ensure hygiene policies are met.
  • To support the Commis Chefs when needed with training and on the job assistance.
  • Give clear instructions to the cooks as you are responsible for the daily tasks and check their understanding.
  • Develop solid working relationship with the FOH team and other departments.
  • Report issues or staffing problems to the appropriate manager.
  • Ensuring the maintenance of the cleanliness and food handling procedures.
  • Implement the Safe & Sound procedures.
  • Monitor the food items cost and minimize the food wasting in the kitchen and kitchen stores.
  • Make sure of the implementation of the expire sheet process and right storage process are done by the kitchen team according to the company policy & procedures.
  • identify slow moving and dead stock and notify the management of such items.
  • Delegate tasks for the following day’s operation and necessary MEP.
  • Be involved with training and succession plans for staff.
  • Receive orders from purchasing and understand the quality of produce allowed to enter into the kitchen. Not to receive any produce that is below our standards.
  • Assist with any tasks delegated by the manager and participate in activities outside of normal duties with other departments as reasonably requested by your manager/s.
  • Ability to work under pressure.
  • Kitchen management and time management are important.
  • Other departments (stewarding, FOH, cleaning)

Job Requirements

  • Certificate/Course/Diploma in Hospitality industry.
  • Previous hotel/5-star experience/cabin crew experience will be considered as a plus
  • Strong commitment to the consistent delivery of exceptional quality customer service.
  • Professional appearance and communicating style.
  • Confident meeting people in an open lounge environment.
  • Attention to detail while multi-tasking under pressure is essential.
  • Good to high English skills – reading, writing and speaking.
  • Customer service experience within a fine dining restaurant preferred.
